Imbued with an air of Parisian elegance, the reimagined restaurant at New York’s Marlton Hotel, Chez Nous, channels the spirit of a private salon—apropos considering the building hosted Jack Kerouac and Valerie Solanas in its heyday.

At the brasserie conceived by hotelier Sean MacPherson and literary agent David Kuhn, Montpellier-born chef Flossie Gilles delivers a menu rooted in French technique (salmon en papillote, vegetarian tagine) with modern additions like tuna tartare and a New York strip. It’s all served in a lush skylighted dining room orchestrated by film production designer Kevin Thompson and filled with velvety scarlet banquettes backdropped by a striking, 30-foot-long mural by Cecily Brown.
