The Macallan’s sweeping 485-acre estate on the picturesque River Spey is a site of alchemy, where the 200-year-old Scottish distiller’s single malt scotch whiskies achieve their complex flavors and velvety textures. It also recently became a site of fine dining thanks to the long-awaited opening of TimeSpirit, a 24-seat restaurant helmed by the Roca Brothers, whose legendary El Celler de Can Roca in Girona boasts three Michelin stars. At TimeSpirit, the seasonal menu is no less prestigious but doesn’t hesitate to have some fun with playful whisky pairings—take the vegetarian haggis with whisky spiced mayonnaise or The Macallan Barley, a dish showcasing whisky ingredients with fermented barley and yeast cream. Made with local ingredients and fresh produce from The Macallan Estate’s kitchen garden, each dish can be enjoyed inside an intimate dining room designed by David Thulstrup, the award-winning architect behind Copenhagen’s celebrated Noma.
