Tucked into Paris’s artful Saint-Germain-des-Prés neighborhood, Moët Hennessy’s first cocktail bar, Cravan, appears as a traditional café from the outside. But inside, Belgian designer Ramy Fischler has conjured a four-story sanctuary with a trio of bars that each marry modern glamour with the building’s 17th-century roots. On the menu are a series of inventive craft cocktails conceived by ace mixologist Franck Audoux. Highlights include the Tunnel, which adds a splash of dry vermouth to the classic negroni, and a fresh take on the Champagne cocktail, made using Moët & Chandon Impérial Brut Champagne syrup, Hennessy V.S.O.P. Cognac, and bitters.
