Daniel Humm Announces Charleston Pop-Up Restaurant
The famed Eleven Madison Park toque brings his elevated plant-focused cuisine to landmark hotel The Charleston Place for a 12-month residency

Jetsetters who pilgrimage around the globe to sample gourmet dishes at World’s Best ranked restaurants consider New York—and chef Daniel Humm’s bastion of vegetable-forward cuisine, Eleven Madison Park—a must visit. But starting October 2, the famed toque will be trading Manhattan for Charleston, South Carolina, taking over the former Charleston Grill space at The Charleston Place hotel for a 12-month residency.
“This project represents more than a collaboration; it’s a shared commitment to bringing people together through the language of food,” says Humm. “Charleston’s connection to the land and sea, and its culinary traditions—from its native ingredients and historic role in maritime trade to its abundant local farms and fisheries—offer so much to learn from. I’m excited to spend time here, connect with the community, and grow through the experience.”
At the preminent hotel, Humm will be crafting plant-focused and climate-conscious dishes alongside thoughtfully curated wine pairings and the distinct cocktails that elevate his art-filled New York lounge, Clemente Bar. However, at the pop-up—labeled Chef Daniel Humm x The Charleston Place, Presented by Resy—the culinary team will draw influence from Lowcountry cooking and seasonal ingredients.
In addition to forging relationships with regional farmers, fisheries, and other sustainability-focused organizations, Daniel Humm Hospitality and BHC, the owner and operator of The Charleston Place, will launch an apprentice program that gives Charleston-based talents the opportunity to train at Eleven Madison Park while the New York team can explore southern traditions at the South Carolina landmark, further boosting the city’s celebrated artisan culture. Guest chef residencies will also take place at the Charleston restaurant throughout the year.
